Baked Salmon with Asparagus

Salmon

Ingredients

  • Salmon Side 250g
  • Salt & Pepper
  • Dionysus Delicate Olive oil

Method

  1. Rub skin side of salmon with sea salt
  2. Fry in Delicate Olive Oiled pan skin side down first , until slightly crispy
  3. Cook other sides of fish until slightly golden
    Do not overcook, leave the salmon pinkish inside
  4. Rest for 4 minutes.
  5. Serve with side of steamed asparagus and lemon wedges.
  6. Top salmon with tablespoon of tzatsiki and a healthy drizzle of Dionysus Delicate Olive Oil


Tzatsiki

Ingredients

  • 500 ml Greek style yoghurt
  • Lebanese cucumber medium (finely grated and remove excess moisture)
  • 2-3 garlic cloves crushed
  • 1tbl spoon dill
  • 5 Tbs Dionysus Delicate olive oil

Method

  1. Combine all ingredients in mixing bowl and mix.
