Lamb Cutlets with Corn Cob and Robust Olive OilIngredients

  • Rack of lamb cutlets
  • Corn
  • Dionysus Robust Olive Oil

Mediterranean Spice Rub

  • 1 Tbs Sumac
  • 1 Tbs Sea Salt
  • 1/2 Tbs Ground Black Pepper
  • 1 Tbs Sesame Seeds
  • 1/2 Tbs Ground Cumin
  • 1/2 Tbs Smoked Paprika
  • 1 Tbs Dijon Mustard
  • 2 Tbs Balsamic Vinegar


Lamb Cutlets with Robust Olive Oil ingredientsMethod

  1. Mix all ingredients on a flat tray
  2. Rub the Robust Olive Oil onto the lamb cutlets
  3. Place small rack of lamb in tray and mix in the Mediterranean Spice Rub
  4. Brown of all sides in high heated fry pan
  5. Place lamb in preheated oven at 250c for 40 minutes
  6. Rest for 10 mins with foil over lamb
  7. slice into cutlets (flesh should be pink and a little bloody)

Serve with corn cob wedges that have been pan fried with Robust Olive Oil until golden.
