Okra & Potato in Red Sauce with Dionysus Robust Olive OilIngredients

  • 250g Okra
  • 4 Potatoes
  • 4-6 Tomatoes (diced)
  • 1 Onion (diced)
  • 2-3 cloves of Garlic (halved)
  • Dionysus Robust Olive Oil
  • Salt & Pepper (to taste)

  1. A simple dish with few ingredients, easy preparation, but loads of flavour.
  2. Clean the Okra by trimming the heads and wash
  3. Place the Robust Olive Oil into saucepan and lightly fry the onion and garlic.
  4. Cut the potatoes into wedges and add them to the saucepan, add salt and lightly fry for 2 min.
  5. Add the Okra and diced tomatoes, season with salt and pepper to taste.
  6. Simmer for 30 min, or until the potatoes are cooked. And your done!

Essential with a crusty loaf of bread, a side of Fetta cheese and a glass of red wine.
